Background
Food defence involves putting the appropriate measures in place that can reduce the chances of the food supply from becoming intentionally contaminated using a number of different agents and materials (chemical, biological or other) that may not be naturally occurring or routinely tested in foods. Publically accessible guidelines to food businesses throughout the supply chain aim to provide guidance on approaches to protect against malicious, economically, or ideologically motivated attacks and present procedures that could be adopted to mitigate and minimise the impact of such an attack.
On the regulatory side, the US FDA Food Safety Modernisation Act (FSMA) rule for Mitigation Strategies to Protect Food Against Intentional Adulteration is aimed at preventing intentional adulteration from acts intended to cause wide-scale harm to public health. The FDA has taken an approach similar to Hazard Analysis Critical Control Point (HACCP) system, requesting covered facilities to prepare and implement a food defence plan.

Hank Karayan – SGS Director of Global FSMA Program
Hank is Director of Global FSMA Program at SGS. He joined SGS in 2011 as International Solutions Manager. Hank started his career as a food safety consultant and trainer. Prior to joining SGS, Hank had held various managerial positions within the certification sector. He was a member of the ISO 22000 technical committee and has led food safety programs and initiatives in North America and globally. With a Bachelor of Science in Biology and an MBA, Hank brings together a wealth of international and local experience in food defense and food safety strategies.
